Four weeks ago I went to the seminar of David Wolfe, a healthy raw superfood guru, who knows so much about the health benefits of different kind of foods. Really inspiring! One of the things he explained to us was that you will absorb the most nutrients when your food is blended, contains some sort of oil and is than heated to 37 Celcius degrees. When soup is consumed at this temperature your body will absorb 60% of the nutrients of the food that you are eating.
Compare that to these absorption numbers:
1) 5% of eaten raw food,
2) 10% blended raw food
3) 40% blended raw food with oil
I found that really interesting and really try to eat more soups these days made with delicious fresh organic veggies. Here is one of my favourite recipes:
- 20g Super Green Mix
- 100ml water
- 100g spinach
- 100g zucchini
- 1/2 ripe avocado
- 1 garlic clove
- 2 tbsp. cold pressed olive oil
- juice of 1/2 lime
- pinch of himalayan or celtic sea salt
- Blend all ingredients in the blender until smooth
- Heat the soup in a pan until 37 degrees Celcius or a bit longer if you prefer warmer soup
- Pour into a bowl
