Sweet Potato Buddha Bowl With Hummus

Serves 2 | VEGAN

 

Ingredients buddha bowl: 

  • 1 cup broccoli florets 
  • 1 sweet potato, diced 
  • 1 bell pepper, diced 
  • 1 tomato, diced 
  • 1 avocado, diced 
  • 2 cups mixed greens 
  • 1 cup cooked brown rice 
  • lemon juice, peanuts (optional)

    Ingredients hummus:

    • 1-2 tsp Golden Mellow mix 
    • 1 can chickpeas 
    • 3 tbsp tahini 
    • 1-2 garlic cloves 
    • ½ cup water

      Directions:

      1. Place the broccoli and sweet potatoes on a lined baking sheet. 
      2. Roast at 180°C for 20-25 minutes or until tender. 
      3. Meanwhile, prepare the Golden Mellow Hummus: Drain the chickpeas, reserving the liquid. Blend all of the ingredients in a high-speed blender or food processor until smooth (Adding 1 tbsp chickpea liquid as needed to achieve desired consistency.) Set aside. 
      4. Combine all of the ingredients in a bowl and enjoy!
